Vineyard
This sub-region of the Yarra Valley is recognised as a premium Cabernet Sauvignon area and with our five acres of vines now over twenty years of age (planted in 1996), they are producing Cabernet Sauvignon with great depth, concentration, structure and just enough herbaceousness to let you know it’s cool climate Cabernet. Grown in ancient grey clay and with VSP trellising to encourage light into the fruiting zone.
Winemaking
In 2016, the Cabernet Sauvignon grapes were cropped at 1.5 ton/acre and were hand harvested in early April and processed immediately. Crushed berries in the fermenter were fermented with wild yeasts and the ferments were treated with a light touch to encourage extraction of soft, ripe tannins from the skins. Once pressed, the wine was transferred to French oak barrels for wild malolactic fermentation and 10 months maturation.
Sensory Analysis
Dense in colour with a brightness showing its youthfulness. The nose is complex with roast game, olives and blackcurrent. The palate being medium bodied with great intensity of flavour. Cherries and a lick of vanilla bring a brightness to the otherwise savoury palate. A nicely balanced wine with plenty of fresh acidity pushing the wine long and a tannin profile that will see this wine live a long life.
