2018 "Coldstream Vineyard" Cabernet Sauvignon

Vineyard:

This sub-region of the Yarra Valley is recognised as a premium Cabernet Sauvignon area and with our five acres of vines now over twenty years of age (planted in 1996), they are producing Cabernet Sauvignon with great depth, concentration, structure and just enough herbaceousness to let you know it's cool climate Cabernet. Grown in ancient grey clay and with VSP trellising to encourage light into the fruiting zone.

Winemaking:

The grapes were hand harvested in mid-March and processed immediately. The bunches were destemmed, crushed and fermented as four small lots, some were wild ferments and others inoculated. Stalks were added back to some fermenters to act as seasoning. The ferments were treated with a light touch to encourage extraction of soft, ripe tannins from the skins. Once pressed, the wine was transferred to French oak barrels (40% new) for wild malolactic fermentation and 9 months maturation. The wine was bottled in January without fining or filtration.

Tasting Notes:

Deep red in colour, the nose is complex with blackcurrant and savoury notes balanced with lovely cedar spice from the oak. The medium bodied palate is concentrated in flavour with dark berry fruits sweetening the savoury tobacco leaf and oak on the finish. The fresh acidity and silky structural tannins will allow this wine to age for 10+ years.
